If you visit Brazil’s mid-western region you will marvel at landscapes that are havens of peace and of profound immersion in nature. In addition to photographic safaris and bird-watching you can go canoing, hiking or trail-walking in the company of locals. As night falls, sit in a circle of friends, drinking tererê—mid-western Brazil’s famously bitter yerba mate beverage made from the green leaves of the plant—and listen to tales of jaguars, to the sound of the local 10-steel-string viola. The habit of drinking this brew was originally borrowed from our Paraguayan neighbors, but is now a hallmark of the regional culture, like ours, a mestizo culture springing from the meeting of Portuguese settlers and native Indians. The region’s rivers swallow up the horizons and are the source of the staples of southern Mato Grosso cuisine: freshwater fish such as pintados and piranhas. Such ingredients are ever-present on the dining-tables of the Pantanal dwellers, seasoned with much hospitality and tradition.
